BRAZIL-NUT FRUIT CAKE 
3/4 c. flour
3/4 c. sugar
1/2 tsp. baking powder
1/2 tsp. salt
3 c. whole Brazil nuts
2 pkgs. whole pitted dates
1 c. maraschino cherries, drained and chopped
3 eggs
1 tsp. vanilla
Vegetable shortening or butter for loaf pan

Sift together flour, sugar, baking powder and salt into a large bowl. Add the nuts, dates and cherries. Mix well. Beat the eggs with the vanilla and blend into the flour mixture.

Pour into a 3x7 pan lined with greased parchment paper (wax paper can be substituted for the parchment paper). Bake in a preheated 350 degree oven for 45-60 minutes. Let cool briefly in pan, then turn out of pan and finish cooling on a rack.
