WEST VIRGINIA FRUIT AND NUT CAKE | |
1 c. walnuts (roast 10 minutes at 350 degrees and chop) 1 c. dried fruit (diced) 1 c. currants and raisins 1 c. apple juice 1 tsp. cinnamon 2 tsp. vanilla 4 c. whole wheat pastry flour 1 c. Eden corn oil 1 tsp. Sea Salt 2 c. rice syrup I buy all ingredients at Health Food Store. I converted a prize-winning recipe from Better Homes & Gardens to a natural ingredient recipe. Cook fruit, raisins and next 3 items until all the apple juice is absorbed. Mix other items in large mixing bowl with wooden spoon. Add cooked fruit mixture. Pour into glass 13x9x2 pan and bake at 350 degrees for 40-45 minutes. Edges will be crunchy. Sprinkle walnuts on top. |
