ITALIAN SAUSAGES WITH GREEN
PEPPERS
 
2 lbs. Italian sausage
1/2 tsp. salt
1 lb. fresh green peppers
1/2 tsp. oregano, crushed

Cut sausage into about 3-4 inch pieces. Remove stems and seeds from green peppers and slice lengthwise.

Place sausage pieces in an ungreased skillet, and fry over medium heat on all sides, about 5 minutes. Then add green peppers, oregano, and salt, and fry over low heat about 5 more minutes. Cover and simmer slowly about 10 minutes, or until sausage is cooked. Serves 4 to 6.
