GROUPER PARMESAN 
1 tbsp. plus 1 tsp. lemon juice
1 tbsp. plus 1 tsp. dry sherry
1/3 c. seasoned, dry bread crumbs
2 tbsp. grated Parmesan cheese
1 tsp. grated lemon rind
1/8 tsp. garlic powder
2 grouper fillets (1 lb.)
Vegetable cooking spray

Combine lemon juice and sherry. Combine bread crumbs, cheese, lemon rind, and garlic powder. Rinse fillets with cold water and pat dry. Dip fillets in lemon juice mixture; roll in bread crumb mixture.

Place fillets in a 10 x 6 x 2-inch baking dish coated with cooking spray. Sprinkle with remaining bread crumb mixture.

Bake uncovered at 400 degrees for 20-25 minutes or until fish flakes easily when tested with a fork. Yield: 4 servings (150 calories per serving).

I recently prepared this for my family and it was simply delicious. For ease of preparation, I set up an assembly line of 1 plate and 2 bowls. The fish was cut in serving size pieces, first dipped evenly in the butter then rolled gently in the bread crumbs, then placed on the baking sheet. I did add extra grated parmesan cheese to the Vigo bread crumbs to bring out the taste of the cheese. The remaining butter was drizzled on top of the filets prior to baking. The filets were garnished with chopped parsley and broiled shrimp and gobbled up by my family. Many thanks for this simple and wonderful recipe!

Wonderful recipe - a real keeper! Try experimenting by substituting the sherry with a Riesling or other white wine.

This is an excellent recipe if you are in a hurry! The sherry gives this recipe a wonderful mystery flavor combined with the Parmesan and bread crumbs. Make sure that you use REAL lemon zest..
