MEXICAN RICE 
2/3 c. chopped onion
3 tbsp. oil
1 1/2 c. raw white rice
1 c. chopped green pepper
1 tsp. chili powder
1 c. tomato juice or 3/4 c. water and 1/4 c. ketchup
1/2 c. ketchup
2 tsp. salt
3 c. water

Saute onion in oil until soft. Add rice, pepper, chili powder, tomato juice, ketchup and salt. Stir. Then add water. Bring to boiling. Reduce heat. Simmer, covered, for 20 minutes or until liquid is absorbed and rice cooked.
