MEXICAN BEEF AND RICE 
1/2 lb. ground beef
4 whole scallions, sliced
1 can (8 oz.) tomato sauce
1/2 c. water
2 tbsp. sliced pitted ripe olives
1 1/2 tsp. chili powder
3/4 c. dry minute rice
Tortilla chips

Brown beef with scallions, breaking beef into small pieces. Add tomato sauce, water, olives and chili powder. Bring to a full boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes. Fluff with fork. Serve with tortilla chips. Makes 2 servings.
