ZUCCHINI BEEF SKILLET | |
1 lb. ground beef 1 c. chopped onion 1/4 c. chopped green pepper 1 clove garlic, minced 1 1/2 tsp. salt 1/4 tsp. pepper 1 tsp. chili powder 5 c. sliced zucchini or summer squash 2 lg. tomatoes, peeled & chopped 1 1/4 c. fresh whole kernel corn 2 tbsp. chopped pimentos 1/4 c. chopped parsley Saute beef, onion, green pepper and garlic in 12 inch skillet until well browned. Add remaining ingredients. Cover and simmer 10-15 minutes or until vegetables are tender. Makes 6 servings. |
