LITE BEEF-ZUCCHINI ITALIAN STYLE 
1 lb. ground round
2 tbsp. corn-oil butter
1 tbsp. flour
1/2 tsp. basil
1 bay leaf
1 sm. clove garlic, finely chopped
1 (20 oz.) can tomatoes
1/2 green pepper, chopped
2 green onions, minced with tops
6 sm. zucchini
Salt and pepper to taste

Brown ground round in microwave-safe colander with a dish beneath to catch drippings. Microwave on high for 1 minute, then stir. Meanwhile on high again, and stir. Repeat until no pink is left. Melt butter in non-stick skillet. Stir in browned ground round, flour, seasonings, tomatoes, green peppers, and green onions. Cook slowly for 10-20 minutes. Slice zucchini thin, but do not peel or parboil. Arrange zucchini in a casserole or baking dish sprayed with Pam, and top with meat sauce. Bake at 350 degrees for 2 hours.

Since microwave ovens vary in power, you may need to adjust your cooking time.
