STRIPS OF BEEF WITH CORN AND
ZUCCHINI
 
1 1/4 lb. round steak, about 3/4" thick or boneless beef ribs
2 tbsp. soy sauce (may add as much as you like after cooking)
1 clove garlic, minced
Black pepper to taste
1 tbsp. each oil & butter
1 can (15 oz.) tomato sauce (or spaghetti sauce)
2 lg. zucchini, cut in quarters lengthwise
4 med. ears sweet corn, husked & cut in thirds
1/4 c. granulated sugar (sprinkled evenly on pieces of corn)
1 lg. onion, cut in quarters
1 basil leave or 1/2 tsp. crushed basil
1 tbsp. thyme (mixed into tomato sauce)
2-3 tbsp. fresh or dried parsley

Trim excess fat from steak. Cut in 1/8 inch crosswise strips and toss with soy sauce, garlic and 1/4 teaspoon pepper. Brown meat quickly in hot oil and butter in large skillet. Add tomato sauce with pan drippings and slowly simmer until meat is tender. Add zucchini. Cover and simmer 5 minutes.
