BAKED CHEESE GRITS 
6 c. water
2 1/2 tsp. salt
1 1/2 c. uncooked regular grits
1/2 c. butter
4 c. (1 lb.) shredded Cheddar cheese
3 eggs, beaten
1 tsp. garlic

Combine water and salt; bring to a boil. Stir in grits; cook until done, following package directions. Remove from heat. Add butter and 3 3/4 cups cheese; stir until completely melted. Add a small amount of hot grits to eggs, stirring well; stir egg mixture into remaining grits. Pour grits into a lightly greased 2 1/2 quart baking dish; sprinkle with remaining 1/4 cup cheese. Bake at 350 degrees for 1 hour and 15 minutes. 6-8 servings.
