BAKED CHEESE GRITS 
8 c. water
1/2 tsp. salt, optional
2 c. reg. hominy grits
1/2 c. butter
3 lg. eggs, room temperature
2 c. shredded cheddar cheese
1/4 tsp. cayenne pepper

Preheat oven to 350 degrees. Bring water and salt to boil. Gradually stir in grits, cook until mixture begins to thicken. Cover pot, over low heat cook 25 minutes. Grease 2 1/2 quart baking dish; set aside. Remove cooked grits from heat; stir in butter. In medium size bowl, beat eggs until fluffy; stir in cheese and pepper. Stir cheese mixture into grits; spoon into prepared baking dish. Bake 40 minutes.
