APPLE OR PEAR CAKE | |
1 c. sugar (or less), may use fructose 2 c. peeled & diced apples or pears 1 egg, well beaten 1 c. flour 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. vanilla (optional) 1 c. chopped pecans Mix sugar and apples; stir occasionally. Add egg when sugar is dissolved (no cooking). Sift flour, soda and cinnamon together, then add to apple (or pear) mixture. Add vanilla and pecans; stir. Pour into greased and floured 8 inch cake pan. Bake at 375 degrees for 40 minutes. Serve with whipped cream. |
