BAKED CAULIFLOWER 
1 head cauliflower
2 tbsp. butter
2 tbsp. flour
1 c. milk
1/2 tsp. salt
2 tbsp. pimento, chopped
1/2 c. chopped green onions
1/4 c. buttered bread crumbs
1 tbsp. grated cheese
1/2 tsp. black pepper

Cook the whole cauliflower in boiling salt water for 15-20 minutes. Drain and place in baking dish. Melt butter in small skillet. Add flour and stir until blended. Gradually add milk, stirring until smooth and thick. Add salt, pepper, pimento and green onions. Stir. Pour over cauliflower. Sprinkle with bread crumbs and grated cheese. Bake at 375 degrees, 20 minutes or until slightly brown. Serve 4-6.
