BAKED CAULIFLOWER 
1 head of cauliflower
2 tbsp. butter
2 tbsp. flour
1 c. milk
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. chopped pimento
1/2 c. green onions, chopped
1/4 c. buttered bread crumbs
1 tbsp. grated cheese

Cook the whole cauliflower in boiling salt water for about 20 minutes. Drain and place in baking dish. Melt butter in small skillet. Add flour and stir until blended. Gradually add milk, stirring until smooth and thick. Add salt, pepper, pimento and green onions. Blend. Pour over cauliflower. Sprinkle with bread crumbs and grated cheese. Bake in 375 degree oven for 20 minutes or until slightly browned. Serves 4 to 6.
