BRITISH JACKET POTATO | |
2 large baking potatoes 2 tins of good tuna (drained) 1 1/2 tbsp. butter 1/4 tsp ground pepper salt till your happy 1 cup shredded mature cheddar cheese 1/4 a tad more real mayonnaise 2 tbsp. very finely diced onion (optional but real nice) Preheat oven on 450°F. Using a knife, (carefully) poke holes in the potatoes. On a microwave safe plate: 5 minutes... then turn.. 5 minutes more.... Place them in the oven on a rack and bake for at least 1 1/4 hour. The skin should be caramel and crispy sweet. During all that ready your Tuna and chill. When potatoes are fork tender, cut a cross on the top of the potatoes and push down till opened. Add butter, salt, pepper... ALL: Cheese... Tuna on the Top, then mayonnaise. Season to taste with salt and pepper. This can be replaced with beans and cheese...
