TEXAS PECAN CAKE | |
1 lb. butter 4 c. flour 6 eggs 4 c. pecans 1 tsp. lemon flavor 2 c. "white" raisins Heat oven to 300 degrees. Grease and flour 9 3/4 inch tube pan. Blend butter and sugar in large bowl. Beat mixture until light and fluffy. Gradually add eggs and lemon flavor. Beat until flexed. Sift flour and baking powder together 3 times. Add nuts and raisins to flour. Gradually add flour mixture to cream mixture. Blend thoroughly and pour into prepared pan. Bake 1 1/2 hours. Cool 15 minutes. Remove from pan and cool completely. |
