CARROT PECAN COOKIES 
1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
3/4 tsp. ground cardamom (optional)
1/4 tsp. cinnamon
8 tbsp. butter, at room temperature
3/4 c. light brown sugar
1 egg
1/2 tsp. vanilla extract
1 c. grated carrots
1 c. chopped pecans
1/2 c. raisins

Heat oven to 325 degrees and lightly grease 2 baking sheets. Combine flour, baking powder and soda, salt and spices. Beat the butter with the sugar until light and fluffy, 2 to 3 minutes. Beat in the egg and vanilla. Beat in the flour mixture. Stir in the carrots, nuts and raisins. Drop the batter by generous tablespoons onto the baking sheets 2 inches apart and bake until the edges are lightly browned, 20 to 25 minutes. Calories: 133. Makes 2 dozen.
