CARROT PECAN COOKIES 
1 3/4 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
Dash of salt
1/4 tsp. cinnamon
8 tbsp. softened butter
3/4 c. light brown sugar
1 egg
1/2 tsp. vanilla
1 c. grated carrots
1 c. chopped pecans
1/2 c. raisins

Beat soft butter with sugar until light. Beat in egg and vanilla. Beat in flour and dry ingredients. Gently stir in carrots, nuts and raisins. Drop by tablespoons on greased cookie sheet. Bake at 325 degrees until done, about 15- 22 minutes; ovens vary.
