TEXAS PECAN CAKE 
2 c. butter
2 c. sugar
6 eggs
1 tbsp. lemon extract
4 c. plain flour
1 1/2 tsp. baking powder
2 c. white raisins
4 c. whole pecans
Dash salt

Cream butter and sugar. Add well beaten eggs, salt and lemon extract. Sift dry ingredients together with raisins and nuts, and add to egg mixture. Blend well. Pour into greased and floured pan. Bake at 275 degrees for 2 hours, or until toothpick comes out clean. NOTE: May use 3 small loaf pans or 1 tube pan.
