CALCUTTA CASSEROLE 
This has been a favorite in our family for many years. The recipe was my Grandmother's, given to my mom and then to me.

1 1/2 pounds lean ground beef
3 tablespoons butter or olive oil (or half each)
2 onions, thinly sliced
4 cloves garlic, minced
1 teaspoon sea salt
1/2 teaspoon garlic powder (optional)
1/4 teaspoon freshly ground black pepper
1/3 cup ketchup
1 cup water
1 green apple, chopped
1 green pepper, finely chopped
2 cups beef stock (or 1 bouillon cube and 2 cups water)
3 tablespoons curry powder (or to taste)
1 tablespoon flour
1/2 cup peas

In a skillet, melt butter and add onions, beef and seasonings (add garlic after beef has begun to brown). Brown well and add apple, green pepper, stock, ketchup, water and curry powder mixed with flour. Stir until smooth.

Place all ingredients except peas in casserole or baking dish and bake at 350°F for 50 minutes.

Defrost frozen peas and add them during the last 15 minutes.

I followed this recipe almost to the letter except had to use an orange pepper instead of green and a different apple variety. My husband is not a fan of curry but I am. I didn't tell him it had it in it but thought he would certainly smell it. Guess he didn't! He even said he'd like it again. The only reason it didn't give it 5 stars was because of all the extra liquid in it. It seems 3 cups of liquid is a bit much. Next time I will just add the 2 cups of beef broth and see how it turns out.
