HERB-ROASTED NEW POTATOES 
3 lbs. new potatoes
4 tbsp. olive oil
1 tsp. rosemary
1 tsp. sage
1 tsp. thyme
1 tsp. salt
1/2 tsp. freshly ground black pepper

Preheat the oven to 425°F. Boil the potatoes until they are almost tender, about 30 minutes. Drain and cut them into 1-inch cubes.

Mix the olive oil, rosemary, sage, and thyme together in a large bowl. Put the potatoes in the bowl and toss well. Arrange them in a single layer on a baking sheet lined with parchment paper. Sprinkle with salt and pepper.

Bake for 45 minutes or until they are golden brown.

Serves 6.
