SKILLET ZUCCHINI WITH RICE 
1 lb. ground beef, chopped
1 med. onion, chopped
4 c. zucchini, sliced
1 clove garlic, minced
15 oz. can tomato sauce
1 c. water
1/2 tsp. salt
1/4 tsp. pepper
2 c. cooked rice
1/4 c. Parmesan cheese

Brown ground beef in a little oil and remove from skillet. Saute zucchini, onion and garlic then add remaining ingredients, except rice and cheese. Simmer 10 minutes. Add ground beef and simmer 10 minutes more. Serve over rice and sprinkle with cheese.
