EASY BEET PICKLES 
2 cans sliced beets
1 c. sugar
1 c. vinegar (white)
1 c. juice from beets
1/2 tbsp. pickling spice (tie in a bag)

Heat the sugar, vinegar, beet juice and spices. Simmer for 10 minutes. Then add sliced beets and simmer another 10 to 15 minutes. Remove spices, and then put beets and juice into a 2 quart jar. Refrigerate.
