1 lb. ground beef 1 onion, chopped 3 cloves garlic, peeled or 1/4 tsp. garlic powder 1 cup picante sauce 8 flour tortillas Sour cream 1 tsp. ground cumin or taco seasoning 1 (16oz)) can refried beans 1 1/2 cups shredded Monterey Jack or Mexican cheese 2 tbsp. butter, melted Brown ground beef with onion and garlic; drain. Stir in picante sauce and cumin or seasoning; simmer for 5 minutes. Remove from heat. Stir in beans; add cheese. Mix well until cheese has melted. Brush 1 side of tortillas with butter. Spoon 1/2 cup of mixture onto center of unbuttered side. Fold 2 sides over filling; fold ends down. Place, seam side down, in 9 x 13-inch baking dish. Bake in preheated 500°F oven for 13 minutes or until crisp and golden brown. Top with sour cream, shredded lettuce, ripe olives, cheese or your favorite toppings. |
