CHOCOLATE PIE | |
6 eggs, separated 2 c. sugar 3/4 c. flour 4 tbsp. cocoa Lg. can evaporated milk 1 3/4 c. water 1/2 stick butter 1 tsp. vanilla Beat egg yolks. Mix sugar, flour and cocoa together. Add water little by little until well mixed and then add rest. Add milk and butter and vanilla. Cook until thick. Pour into baked pie shells. For best results, cook filling in heavy pot - cast iron if you have one. Stir constantly to keep from scorching. COCONUT PIE: Use same as chocolate, except omit cocoa and use 1/2 package or large can of Baker's Coconut in filling. MERINGUE: Use egg whites that are separated from yolks. Beat until stiff. Add 7 tablespoons sugar and 3 tablespoons white Karo syrup. Beat; add dash vanilla. Spread over pie filling. Bake in hot oven until brown. |
