ESTER'S TOMATO CONSERVE 
2 1/2 c. ripe California tomatoes
1 lemon thinly sliced
1 orange thinly sliced
1/2 tsp. ginger
2 lbs. sugar

Peel and chop tomatoes. Place in large kettle. Add lemon, orange and ginger. Bring to boil. Reduce heat. Simmer uncovered approximately 1 hours, until tender. Stir occasionally. Stir in sugar. Cook until thick (219 degrees). Pour into sterilized jars and seal. This is wonderful served with bagels and cream cheese.
