CHOCOLATE PUDDING ZUCCHINI BREAD 
3 eggs
1 1/2 cups sugar
3 tsp. vanilla
1 cup vegetable oil
2 cups grated zucchini
3 cups all-purpose flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1 (3 oz.) box instant pudding
1/2 cup coconut
1/2 cup baking chips

Beat eggs until light and fluffy. Add sugar, vanilla and oil. Mix well. Stir in zucchini. Add mixed dry ingredients. Stir. Fold in coconut, dry pudding and chips. Pour into 3 small greased and floured bread pans.

Bake at 350°F for 50 to 55 minutes or until done. Cool in pans for 5 minutes, then remove and cool completely.

Variations:

- Chocolate pudding and chocolate chips.
- Butterscotch pudding and peanut butter chips.
- Lemon pudding and vanilla chips.
