3 lg. eggs, beaten
1 c. oil
2 c. sugar
2 c. zucchini, peeled & grated
2 tbsp. vanilla
2 1/2 c. flour
1 tsp. salt
1 1/2 tsp. baking soda
2 1/2 tsp. baking powder
1/2 c. cocoa
1 c. nuts, chopped

Heat oven to 350 degrees. Grease and flour 2 (8 x 4-inch) loaf pans (or 1 [10-inch] tube pan). Mix eggs, oil, sugar, zucchini and vanilla until well blended. Mix flour, salt, baking soda, baking powder and cocoa in another bowl. Pour flour mixture into zucchini mixture. Add nuts. Blend well. Bake in prepared pans (or pan), 45 minutes to 1 hour. Test for doneness with a toothpick.
