FRUITED RICOTTA BREAD | |
4 c. flour 2 tsp. baking powder 1/4 tsp. salt 2 c. Ricotta cheese 3 beaten eggs 1 tsp. vanilla 2/3 c. sugar 3 tbsp. canned fruit (chopped) 2 tbsp. raisins 1 tbsp. chopped almonds 1 tbsp. grated lemon peel 1 tbsp. melted butter 1 tbsp. confectioners' sugar Preheat oven to 375 degrees. Grease and flour cookie sheet. Sift flour into large bowl; make a well in center; stir in Ricotta cheese, eggs, vanilla, sugar, fruit, raisins, almonds and lemon peel. Knead lightly until dough holds together. Shape into 12 inch long loaf and place on prepared pan. Bake for 50 to 60 minutes. Brush with butter over warm loaf. Sift confectioners' sugar on top. Cool then serve. |
