JPS TURKEY MEATBALL AND SPINACH
SOUP
 
8 oz fresh ground turkey
˝ diced onion caramelized (sauté with paprika and olive oil)
1 tbsp. Low sodium soy sauce
1 tbsp. Worcestershire sauce
1 qt. Manischewitz chicken broth
1 can Bush’s Great Northern beans (rinsed)
1 bag fresh baby spinach steamed
Sliced white mushrooms
1/3 cup White Zinfandel wine

Using first four ingredients, mix well and form mini-meatballs (about 1 inch each). Saute’ meatballs until browned in a 3 qt. pot. Add chicken broth and Great Northern beans. Simmer on medium-low for 30 min. Add sliced mushrooms and steamed spinach. Continue simmering for 5-10 minutes, adding wine at the finish.
