LEMON MERINGUE PIE FILLING 
1 c. plus tbsp. sugar
1/4 c. cornstarch

Mix in saucepan.

Add:

1 c. plus 2 tbsp. water

Cook over medium heat stirring constantly until mixture thickens and boils. Boil 1 minute.

Beat 2 egg yolks, stir half of the hot mixture into the yolks. Then return all to saucepan and boil for 1 minute, stirring constantly. Remove from heat.

Add:

1 tbsp. butter
3 tbsp. lemon juice
1 tsp. grated lemon rind
