LEMON CUSTARD PIE FILLING 
1 9" unbaked pie shell

Beat:

3 egg yolks

Then add:

Juice of 1 lemon
1 tsp. grated lemon rind
Pinch of salt
1 1/2 c. milk

Beat 3 egg whites and fold into the above mixture.

Bake at 350°F on the bottom oven rack for 35-40 minutes or until a thin knife inserted in center comes out clean.
