LEMON MERINGUE PIE FILLING 
Basic pie crust and basic meringue or as listed with Chocolate Meringue Pie above

LEMON FILLING:

1 1/2 c. granulated sugar
1/3 c. cornstarch
1 1/2 c. water
3 egg yolks, beaten
3 tbsp. butter
4 tbsp. lemon juice

Mix sugar, cornstarch, and water together in saucepan. Stirring constantly, bring to a boil. Boil for 1 minute; remove from heat. Spoon some of the hot mixture into the beaten yolks and mix well. Pour egg mixture into saucepan, return to heat, boil 1 minute longer. Remove from heat to stir in butter and lemon juice. Pour into baked pie crust; top with meringue and bake.
