LIVELY LEMON ROLL - UPS 
1/2 c. butter
1 tbsp. lemon juice
2 tsp. instant powdered chicken broth or beef bouillon
1 tsp. Tabasco sauce
1 c. cooked reg. rice
1 pkg. frozen chopped broccoli, thawed
1 c. shredded sharp cheese
2 lbs. flounder (in 8 fillets)

Heat butter, lemon juice, bouillon, and Tabasco sauce until dissolved to make sauce. In a bowl, combine cooked rice, broccoli, shredded cheese, and 1/4 cup of the butter sauce; mix. Divide mixture into 8 parts and roll up one part on each of the fillets. Place in a baking dish, seam side down. Pour remaining butter sauce over fish. Bake at 375 degrees for 25 minutes.
