TOMATO CASSEROLE 
1 1/4 c. pkg. onion and garlic croutons
3 med. size ripe tomatoes, sliced 1/4 inch thick rounds
6 oz. Mozzarella, thin slices
2 tbsp. basil
1 tbsp. chives
Black pepper to taste
4 tbsp. vinegar

Put croutons on bottom of 9-inch glass pie plate. Overlap tomatoes and cheese in a circle to cover all croutons. Sprinkle with basil, chives, and black pepper. Microwave on high for 3 minutes. Pour oil and vinegar over top of casserole. Microwave 1-2 more minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
