LOW SODIUM BEEF CASSEROLE 
1 lb. lean ground round
1/2 c. diced celery
1 tbsp. instant minced onion
1 (28 oz.) can whole tomatoes and liquid
1/2 c. uncooked long grain rice
1 tsp. chili powder
1/4 tsp. pepper
1 (4 oz.) can mushroom pieces and liquid

Place a plastic colander in a large glass mixing bowl. Crumble ground round into small pieces and cover with waxed paper. Microwave on HIGH for 5 minutes or until meat is no longer pink, stirring after 2 1/2 minutes.

In a 3-quart casserole, combine ground beef, celery, onion, tomatoes, rice, chili powder, pepper, and mushrooms. Microwave covered on HIGH for 10 minutes, stirring half-way through cooking time. Stir well. Reduce power level to medium, and microwave covered for 20 minutes or until rice is soft.

Since microwave ovens vary in power, you may need to adjust your cooking time.
