BAKED EGGPLANT AND SAUSAGE
CASSEROLE
 
1 lb. sausage (casing removed)
1 sm. onion (chopped)
1 green pepper (chopped)
2 med. eggplants (cubed)
1 clove minced garlic
1 tsp. oregano
1 tsp. basil
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1/2 lb. shredded mozzarella cheese

Brown sausage in skillet. Add onion, pepper, eggplant, garlic, oregano and basil. Saute about 10 minutes. Add tomato sauce and paste. Simmer until eggplant is tender, about 20 minutes. Transfer to a casserole. Top with cheese. Bake at 375 degrees for 20 to 30 minutes.
