NATE & JUDY'S HOPPIN JOHN 
1 sm. pkg. dried blackeyed peas
2 lbs. smoked ham
1 lg. onion, chopped
1 tsp. salt or to taste
2 tsp. pepper
1 tsp. red pepper
2 c. water

Rinse peas under running water. Cover with water and soak for 4 to 6 hours. Combine peas, ham, onion, salt, and pepper; add about 2 cups water in a large pot. Cook slow for about 2 hours. Serve with rice.
