HOPPIN' JOHN | |
1 c. raw rice 4 slices bacon 1 med. onion, chopped 2 1/2 c. water 1 tsp. salt 1 (15 oz.) can black eye peas, drained Fry bacon, remove from pan and crumble. Saute onion in bacon grease. Bring water to boil. Add onion, bacon grease, salt and rice to boiling water. Cover tightly, lower temperature and simmer for 20 minutes. Add bacon and blackeye peas. Simmer 5 more minutes. Remove from heat and let stand about 5 minutes until liquid is absorbed. Serves 8. |
