HOPPIN JOHN 
1 c. rice, uncooked
1 can black-eyed peas
1 med. onion, finely chopped
1 lg. piece of celery, thinly sliced
1 c. cooked ham, chopped
2 tbsp. parsley flakes
1 tbsp. garlic salt
Salt and pepper to taste

Cook rice according to package directions. Set aside. In large skillet fry celery and onion until tender. Add ham, cooked rice, black-eyed peas (with juice), and seasonings. Stir well and simmer for 20 minutes.
