QUICHE LORRAINE 
1 (9 inch) pie shell
8 slices bacon
1 c. grated Swiss cheese (4 oz.)
1/2 c. minced onion
4 eggs
2 c. whipping cream
1/4 tsp. sugar
3/4 tsp. salt
1/8 tsp. cayenne pepper
1/8 tsp. nutmeg
1/8 tsp. black pepper

Bake pie shell partially (10-12 minutes at 400 degrees). Cook bacon until crisp, then crumble. Saute onion in 2 tablespoons of remaining bacon fat.

Preheat oven to 425 degrees. Sprinkle bacon, cheese and onion in pie crust. Beat remaining ingredients until blended. Pour into bacon, cheese mixture. Bake 15 minutes at 425 degrees, then turn back oven temperature to 300 degrees and bake 30-35 minutes. Let stand 10 minutes before cutting. 6-8 servings.

This is not how you make Quiche Lorraine. Real Quiche Lorraine is made with eggs cheese and bacon and onions and with flour and salt and pepper and milk and butter. Mushrooms. You mix the flour eggs and milk then add the butter and bacon,onions, cheese and mushrooms. The flour makes the crust with the other ingrediants inside. This if from my sister in Belguim they laughed like crazy when I said they use pie crust. She said OH NO that is not real quiche.
