1 c. shortening (part butter)
1 1/2 c. sugar
3 eggs, beaten
1/2 tsp. lemon extract
2 1/2 c. flour
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. salt

Shape in 1 inch balls and place on ungreased cookie sheet. Bake 350 degrees for 12 to 15 minutes.
