CUSTARD RICE PUDDING 
1/2 c. cooked rice
3 eggs, beaten
1/2 c. sugar
1/4 tsp. salt
1 tsp. vanilla
1 1/2 tsp. grated lemon rind
1/2 c. raisins
3 1/2 c. milk
Nutmeg

Preheat oven to 300 degrees. Mix rice, eggs, sugar, salt, vanilla, lemon rind, raisins and milk. Pour into a buttered baking dish and dot with butter. Sprinkle with nutmeg. Set in pan of water and bake about 1 1/2 hours. I usually double the recipe.
