WILTED LETTUCE 
1 head lettuce or 2 lg. bunches leaf lettuce

1 lg. onion, sliced

1/4 c. vinegar & water

6-8 slices salt pork, diced

Cook salt pork until crisp. Break lettuce in bowl. Add onions. Pour vinegar and water into skillet with grease very carefully (it can flame up). Bring to boil. Pour over lettuce and toss. Pour liquid back into skillet and bring to boil again. Pour over lettuce and toss. Salt and pepper to taste.
