WILTED LETTUCE 
1 lb. crisp leaf or head lettuce, washed
6-8 radishes, optional
5 slices bacon, 4 oz. finely chopped
2 tbsp. finely chopped onion
1 tsp. salt
2 tsp. sugar
2 tbsp. vinegar

Separate lettuce leaves and wash. To remove rinsing water roll up leaves in a towel and shake gently. Tear head lettuce into bite-size pieces and slice radishes. Pan fry bacon in skillet until half done, add onion and continue cooking over low heat until bacon is done.

Meanwhile warm glass bowl by letting warm water stand in it. Pour out water, wipe dry quickly, turn lettuce, radishes and drained bacon and onion into it. To drippings left in pan (not more than 4 tablespoons) add remaining ingredients. Stir to blend and heat to boiling, then pour over lettuce and radishes. Toss until thoroughly combined. Serve immediately while warm. 5 servings.
