BAKED RICE WITH PINE NUTS 
2 1/2 tbsp. butter
2 tbsp. minced onion
1/4 tsp. minced garlic
1 c. uncooked rice
1 1/2 c. chicken broth
1/4 tsp. thyme
1/2 bay leaf
1/8 tsp. cayenne pepper
1/4 c. toasted pine nuts

Preheat oven to 400 degrees. Cook onion and garlic in 1 tablespoon melted butter. Add rice and stir briefly over low heat until grains are coated with butter.

Stir in chicken broth, making sure there are no lumps in rice. Add remaining ingredients. Cover with a close-fitting lid and bake 20 minutes. Stir in remaining ingredients (butter and pine nuts).
