DANISH POTATO SALAD 
1/4 c. vinegar
1/4 tsp. salt
2 well beaten eggs
2 tbsp. chopped onion
1 c. salad dressing
1/4 c. water
Dash pepper
6 c. cooked potatoes
2 tbsp. chopped green pepper
1/4 c. sugar
1 tsp. prepared mustard
1/2 c. chopped cucumbers, optional

Combine the vinegar, water, sugar, salt, pepper and mustard in a saucepan. Bring to a boil. Reduce heat. Stir in beaten eggs until mixture thickens. Remove from heat and stir in salad dressing. Combine the potatoes, cucumbers, onions and green pepper in a large bowl. Add to this the cooked dressing and mix well.
