SNELL POTATO SALAD DELITE | |
6 med. size potatoes, boiled & peeled 3 hard boiled eggs 1 c. carrots, finely diced 1 c. celery, finely diced Mayonnaise Cut potatoes into small pieces. Chop eggs into fine pieces. Mix a layer of potatoes, eggs, carrots, and celery. Repeat until all ingredients are used up. Add mayonnaise to above to desired consistency. Add a touch of mustard for color. Mix all until all ingredients are moist. The celery and carrots add a "crunch" to the potato salad. Chill and serve. Serves about 4. |
