SWEET AND SOUR CHICKEN 
4 boned, skinless chicken breast halves, cut into bite-size pieces
1 medium onion, chopped
1/2 medium green pepper, chopped
1 (8 oz.) can pineapple chunks, drained
1/3 c. sweet and sour sauce
1 tsp. soy sauce (optional)
Hot cooked rice (optional)

Rinse chicken and pat dry. In a 2 quart microwave safe casserole dish, combine chicken pieces, onion, and green pepper. Micro-cook, covered, on 100% power (high) for 6 to 8 minutes or until no pink remains in chicken pieces, stirring twice. Drain off juices.

Stir in pineapple chunks, sweet and sour sauce, and soy sauce, if desired. Cook on high for 1 to 2 minutes more or until mixture is heated through. Serve with rice (if desired). Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
