ORANGE-CANDIED SWEET POTATOES | |
6 med. sweet potatoes 2 tsp. salt 1/2 c. boiling water 3 tbsp. butter 1 tbsp. orange juice 1/2 tbsp. grated orange rind 3/4 c. light or dark corn syrup 1/4 c. brown sugar Peel and halve potatoes; place in cooking pot. Simmer, covered, in salted boiling water for 15 minutes or until tender. Drain, reserving 1/4 cup liquid. Dot potatoes with butter. Combine reserved liquid and remaining ingredients; pour over potatoes. Simmer for 15 minutes or until glazed, basting frequently. Turn potatoes once. Yield: 6 servings. |
